Mother's Love
This post is dedicated to all the mothers out there who have played and is still playing a vital and significant role in the upbringing of their children. Needless to ask who plays the biggest role in a child’s development. it's the ‘Mother’ of course.
We are however reflecting on the mother's role and its importance in a child’s life. A mother is like the nucleus around whom everyone else orbits in a family. A mother provides the required structure and balance to the household. She is the one person who ensures that life functions in an orderly way, right from breakfast, lunch, dinner being served at the table, to clothes being ironed and kept in the cupboard, to the kitchen always being stocked up with food, the beds perfectly made, the list is endless!
However, more importantly, a mother brings balance to the family, mentally and emotionally. She is, more often than not the official role model, caretaker, administrator of hugs and kisses! She switches effortlessly from being a disciplinarian to a friend in a matter of minutes. A mom is the person with the solution to any problem and would help one easily forget or overcome an issue.
Needless to say, she plays a pivotal role in what a child becomes tomorrow. A mother is the one person who is responsible for a child’s wholesome development and takes charge of it. She is the one who ensures, that the child gets ample nutrition, activity, opportunity and rest. She is the one person, who a child looks out for, in order to feel secure, loved and happy, right from the time of his/her birth. And that invisible umbilical cord continues long after the physical one has been cut off!
Clearly, a mother’ journey is perhaps one of the toughest. A famous quote, “A mother is a person who seeing there are only four pieces of pie for five people, promptly announces she never did care for pie” reminds one of her abundant generosity and kindness.
Having said all that, it is not only required but mandatory that all mothers be remembered, celebrated and be told how special they are. To you mummy, thank you for being ‘my friend and my strength’.

How do your customers find out about your business? How do you get more customers? What approach or method is the most suitable and how do you implement them?
By far the most common way customers learn about a business is from word of mouth. That's right, word of mouth from existing customers. It is the number one method of attracting new customers. We enter the world crying, but for some reason, as we get older, the act of shedding tears is seen as a sign of weakness in both men and especially women. The usefulness and effectiveness of hand washing cannot be overemphasized. When we touch people, surfaces and objects throughout the day, we accumulate a large amount of germs on our hands and in turn, we infect ourselves with these germs by touching our eyes, nose or mouth. Although it's impossible to keep your hands germ-free at all times, that's why we needs to cultivate the habit of washing our hands frequently.

Steps on how to manage your food craving
By now you guys must be aware that i am an advocate when it comes to food. Not just any food, but good food. The question here is, what constitutes good food? How does one define good food? My own definition of good food is any food with the right amount of nutrients.
Food craving on the otherhand according to Wikipedia is an intense desire to consume a specific food, and is different from normal hunger. Drewnowski, a well-known researcher on taste and preferences stated that food cravings arise to satisfy emotional needs, such as calming stress and anxiety. Cravings are far more likely to be a message from your brain about how you're feeling, than your stomach saying its hungry or that you have a specific nutrient need.
The following steps you can take to manage your cravings:
- Don’t allow yourself to establish a habit – a cake at 4pm each day is not ideal. Instead eat a piece of whole fruit and a handful of nuts.
- Use distraction and do something else that you enjoy – phone a friend or listen to music.
-Learn to manage your stress – what works for you is not necessarily going to be the same for your partner, but find that special thing that helps lighten the load.
-When you’re premenstrual, manage your blood sugar levels by eating little and often and don’t forget to include protein in your meals and snacks.

The Calabar Food Culture
I often wonder which tribe has the best local foods in Nigeria and would give a standing ovation to the Calabar tribe. Alot of local dishes ranging from Edikang-ikong Soup, Editan Soup, Afia Efere Soup, Afang Soup and the almighty Ekpang Nkukwo Dish. Today's focus would be the Edikang-ikong Soup.
Edikang-Ikong Soup
Edikang Ikong is considered the most popular cosmopolitan dish. It is prepared with vegetable pumpkin leaves (ikong ubong/ugwu), water leaf (mong mong Ikong), fish, meat, periwinkle (mfi ikpok), palm oil, cray fish and other ingredients.
Recipe
1 Assorted meat (beef, oxtail, tripe, ponmo, bokoto and bush meat)
2 Snails (washed with lemon and limes)
3 450g/1lb stockfish (pre-soaked)
4 450g/1lb dry fish (thoroughly washed)
5 450g/1lb periwinkles
6 225g/8oz whole dry prawns
7 225g/8oz ground crayfish
8 1.35kg/3lb fresh Ikong ubong (pumpkin leaves; washed & shredded)
9 1kg/21b fresh waterleaf (washed and shredded)
10 200ml palm oil
11 600ml/1pt salt to taste
How to Prepare
Start by washing the meat thoroughly and placing it in a large pot. Add some sliced onions, Pepper and some meat stock. Cook for 30 minutes. Also wash the snail, Smoked dry fish and the periwinkles and process to add them to the pot of meat and cook for another 10 minutes. Finally add the shredded Ikong Ubong (pumpkin leaves) and waterleaf, mix in properly. Allow to simmer for 15 minutes and then add the crayfish and palm oil. Give it a good stir and gentle simmer for another 10 minutes until well blended and the aroma fills the kitchen. Remove from heat and serve hot with full, garri or pounded yam.

My go-to Meal when am Feeling Lazy
Yes, every once in a while, I might feel too lazy to cook maybe due to exhaustion or just plain lazy. My go-to meal is fried plantain popularly know as Dodo. I start first with washing, peeling and slicing them into small pieces which are placed in a bowl.
I sprinkle salt on the plantain and then toss it to ensure that the salt is evenly distributed and add some drops of water to help get the salt on each plantain. I pour a generous quantity of vegetable oil into a frying pan and allow to heat. Then proceed to place the plantains in the pan and fry until they are brown in color. And yes my Dodo is ready for consumption.
